1 tsp salt
2 cups warm water, boiling

Healthy Hints

Curries and stir fries are often accompanied by fried rice but steamed Basmati is a much healthier side dish. This recipe uses a touch of oil just to keep the rice grains separate – you could try lemon juice instead. Add some whole spices like cumin seeds, cardamom, whole black pepper and cloves for an aromatic touch. Brown rice makes a nice higher fibre version but you will need to cook it for longer.

Cooking Guide

1. Wash the rice and soak it for 10 minutes.
2. Put boiling water and salt in pan big enough for 4 cups of water.
3. When boiling add the rice and oil and let it come back to a boil.
4. Turn the heat down to a gentle simmer, cover the pan with a tight fitting lid and let it simmer for 10 minutes.
5. Turn heat off. Use a fork to just ruffle the rice and also check that it is cooked. If not give it another minute and if it needs water add a ¼ cup.
6. When cooked ruffle and separate the rice grains. If you are using an electric hob, remove from heat but leave covered. If you are using a gas hob, it is safe to leave it there with the lid on.
