Ingredients

150 g sugar
150 g margarine
100 g fine semolina
1 medium egg, beaten
1 pinch yellow food colouring, optional
220 g plain flour
½ tsp cardamom, ground
1 pinch nutmeg, ground
½ tsp baking powder
13 glace cherries, to decorate

Healthy Hints

Try using wholemeal flour, less sugar and unsaturated margarine. Or you could be disciplined and eat just one. Store the rest away in an opaque tin so you don’t get tempted to reach for more.

Cooking Guide

1. Preheat the oven at 180 C (350 F, gas mark 4).
2. Beat the sugar and the margarine together until creamy.
3. Add the semolina, egg and colouring (optional) and mix well.
4. Mix in the plain flour, cardamom, nutmeg and baking powder.
5. Shape the dough into balls, 3 centimetres in diameter. Flatten each one slightly and place them on a greased tray.
6. Cut the glace cherries in half and place in the centre of each ball.
7. Bake for 15–17 minutes until golden brown and cool on a wire rack.
